Director of Food and Beverage
Rob Ittner has been in the food and beverage industry for over 30 years and has owned 5 restaurants over that time. Notably, Rustique Bistro in Aspen, awarded by Esquire Magazine “American’s Best New Restaurants” when it opened in 2000. Rob also owned the Cooking School of Aspen. Rob sold his restaurants in 2019 and has recently been working as a restaurant consultant and Director of Food and Beverage at a luxury hotel in California.
Prior to his 20 plus years in Aspen, Rob was an instructor at the New England Culinary Institute and is a graduate of the Culinary Institute of America.
Rob’s approach to food is based on his philosophy that “Food is Art”. Rob’s definition of Art is “something that we experience through our senses that inspires an emotion” and he believes that is how food should be experienced just as one would experience a painting, sculpture or composition of music.
